Leftover Pork Roast Farfalle Pasta

Next dish for the leftover pork, a stovetop noodle dish, simple to make and quick!  This recipe will make enough for two, with just a bit leftover to take for lunch one day.  All you need is the leftover pork, pasta, a can of mushroom soup and a few more staple ingredients and you have dinner.


I like farfalle otherwise known as bowtie pasta, but you can use any kind of pasta you like.  Chop up one and a half cups of leftover pork.  Boil pasta and drain, add a few ingredients, heat through and serve!  Dinner in under 30 minutes.


Leftover Pork Roast Farfalle Pasta

2 cups farfalle or bowtie pasta
dash salt
1/2 tablespoon olive oil
1-1/2 cups chopped leftover pork
1 can mushroom soup
1/2 cup milk
1 teaspoon lemon-pepper seasoning
1 teaspoon garlic salt
1/4 cup green onions
Grated Parmesan cheese for topping.

Bring a pot of water to boil with a dash of salt and the olive oil.  Add pasta and reduce heat to medium, boil pasta 10-12 minutes until al dente.  Drain pasta and return to pot.  Add mushroom soup, milk, pork, lemon-pepper, garlic salt and green onions.  Stir until well combined.  Heat through.  Serve in pasta bowls topped with grated Parmesan cheese.  Add a bread stick and some steamed broccoli for a complete meal.


You can substitute any leftover protein really.  Make it with browned ground beef and add 1/2 cup of sour cream for instant stovetop stroganoff.  Or use turkey or chicken with spaghetti noodles for stovetop tetrazzini.
