Autumn is my favorite time of year for being in the kitchen, making pumpkin bread, trying new recipes, cooking comfort food, making football snacks, and hearty soups for chilly days. I am lucky that My Sweet Babboo loves vegetables of all kinds, so experimenting with them is fun. There are so many ideas in the Milk Street Vegetables cookbook, it will take a long time to get to all of them! I have made several from this book already. Today, we’ll do the Zucchini Fritters because I’ve been looking for a way to get crispy zucchini chips for quite a while. These were yummy! Start by downloading the recipe – Baked Zucchini Fritters – then gathering the ingredients.

The recipe calls for grating the zucchini and the onion. This is a technique I have not tried before, but it was easy.

Next, place the zucchini on a towel so you can wring out the excess water. I have some smooth surface, thin cotton towels specifically for cooking and baking, and this purpose of squeezing out water. Don’t use a terry cloth or nubby textured towel, as the wrung out vegetable bits will stick to them and be difficult to get out.

All wrung out, you will be amazed at the amount of water you get. I wring mine over the sink, and go at it hard. You want to get the zucchini as dry as you can.

Mix with the panko bread crumbs, eggs and other ingredients.

I used an ice cream scoop to portion out the fritters to make a half recipe, with 10 fritters. Don’t be alarmed by the amount of oil on the baking sheet.

These bake at a high heat, 450ºF. Push the edges into the fritters so there aren’t little bits left out to burn. Pat them down just a bit so they come out about an inch thick.

Turn them over halfway through the cooking so both sides get some browning and crisping.

Yum, these are so good, the picky eaters will not know they are eating vegetables! I have to say that we ate them so fast I didn’t get a photo of them on a plate! The sauce recipe given is a Greek based Yogurt and Feta. But in the best tradition of Milk Street’s Cookish Cookbook, I improvised. I had sour cream and goat cheese, so I used that.

This past week I got a super new tool for the kitchen, a Milk Street Precision Pin! Is this not the coolest thing? It is a brilliant idea and I can’t wait to give it a try.

It is made of high quality beech wood, with a laser-etched ruler to measure pans and make sure the pie dough is just the right width. This will be so much better than guessing if the crust is wide enough before putting it in the pie pan.

The wood end caps vary in thickness so the space between the roller and the counter is uniform across the roller. Now, I know when the thickness of a rolled pastry is correct for the recipe. I can’t roll it too thick or too thin. I know this will make rolling out pie crusts faster and easier, particularly if I make another Milk Street Pumpkin Bourbon Tart.

So timely. I was just thinking this week that we need to include more veggies in our diet. I live with a meat eater, so we never miss a meal with meat! But sometimes the veggies are an afterthought and don’t get much attention and are then boring. The veggie fritters look good and love doing things in the oven. I have to make a trip to the store for some of the ingredients, but I’ll do that when I am out this week. Did you season with the za’atar? Have never heard of that seasoning. The Bourbon Pumpkin tart looks fantastic!
Yes, I’ve used Za’ater before, on a baked chicken dish, link here – Za’atar Chicken. It is a very different taste. The Bourbon Tart is wonderful, I took it to a party, and posted about that during Autumn Jubilee 2019 Pumpkin Tart.

Here at Gobbler’s Knob, my husband does the cooking, and I do the cleaning. He is not a fan of veggies which I prefer over meats. However, he is a fan of Mr. Kimball. I’m thinking that cookbook might be heading this way soon. Any vegetable dish will work for me, but those fritters might tempt him to try one. I first used the sale link to Milk Street. The double sided bread cutting board was also interesting. He already has the rolling pin.

Mike Street Cookish looks interesting for those times when you have a little bit of a lot of items that need to be cooked. Every time I would watch his shows I would want to make that dish right away.
Those sound so good. I’ll bet a bleu cheese dressing would be good with them too. That rolling pin is brilliant! I’ve always used those rubber end rings to get the right thickness, but I love this idea.
The fritters look delicious. Thank you for the recipe. I have the “meat eater” at my house, but when the rest of the family is here for a meal I like to up my game a bit with the veggies. Looks like a lovely cookbook. On the Milk Street website, I spent a lot of time browsing the “gadgets”, and like the Milk Street Julienne Peeler. Thinking about the recipe, I wonder if gluten free Panko crumbs would substitute easily? And, you know I would be trying them in the air fryer!!

Everything I looked at seems as though it would be delicious. I think the zucchini fritters would be great, but I also know I would love the roasted rainbow carrots. I’ve always loved to cook, but cooking now for myself isn’t fun. However, these recipes seem as though they could be cut down. As for a gadget ~ well, I’ve always loved kitchen gadgets and that rolling pin has caught my eye.

I agree with Milk Street that vegetables should be the center and main section of your plate. I’d love to check out that cookbook in more detail. Those zucchini fritters totally remind me of potato pancakes, but probably a lot healthier. Yum!

What a great deal! I’ve wanted the Seasons Cookbook for a long time so I picked it up. Thanks for sharing the sale! As far as veggies go, I know it’s controversial, I love love love potatoes. I’m always looking for a new way to eat them. I think I’ll try the BASQUE-STYLE LEEK AND POTATO SOUP, the POTATO SALAD WITH CAPERS, OLIVES AND OLIVE OIL TUNA, and the LEBANESE-STYLE SPICY POTATOES WITH LEMON AND CILANTRO. And I didn’t even look at all of the recipes yet.
I will also try this zucchini recipe you’ve shared. It looks delicious and is another way to eat all of the zukes that my plants are producing. In Los Angeles, we get to grow year round.

I really like Milk Street and was introduced to them through your blog! I love their salad recipes! I have not make the pie or those zucchini fritters but they look so tasty! I have Never seen/heard of that precision pin but how fabulous that it has the measurement on it. The precision pin would be my pick to try out! ohGosh, I love fritters! I’m especially fond of the yellow crook neck squash with some parmesan cheese in the fritters. You should try those too! This week we had a dip in the weather, so I made some yummy jumbalaya with all the good stuff! Smoked sausages, boudin, italian sausages, crawfish and shrimp. Normally I throw in some chicken as well, I just didn’t have any thawed at the time. No worries, it’s great to mix it up once in a while!
