Now that there is a bunch of pork roast leftover in the frig, and some in the freezer, it is time to start using it in dishes that have a different flavor than the simple original roast. Remember, the spices and onion used to cook it originally will go many different ways for the leftovers. For the next meal, I wanted a quick lunch.
So I started out with the tortilla chips on a plate. I took 1/4 cup of pork roast and blended it with 2 tablespoons of light sour cream, and one teaspoon of Chipotle Chili Powder. Chipotle is the smoked jalapeno pepper, with a milder taste than the raw jalepeno, but adds just enough bite to know it is a Mexican inspired dish.
I topped that with an handful of grated cheddar cheese and 1 tablespoon chopped green onion,
This is the kind of recipe with a lot of leeway, more onion, less cheese, more sour cream, different spices, different kind of chips, add salsa, what ever you like. Microwave for 30 seconds to one minute until the cheese is melted and the pork is hot.
Yum! You might find it hard to eat just one plate!! So make another one to share or eat.
Easy and fast. Lunch in less than 5 minutes. Make them ultimate nachos by adding shredded lettuce, diced tomato and chopped avocado. Now that’s lunch!
